Open-flame cooking in the heart of Mendoza

On the Pass

Francis Mallmann

Opened in the mid-1990s by the legendary Francis Mallman, this atmospheric restaurant is located inside a former winery. Mallman’s menu reflects his reputation for inventive fire-based cookery with a focus on grilled meats and fish, as well as myriad traditional Patagonian dishes. 1884 is one of nine restaurants around the globe led by the Argentine icon.

Book a garden table for views of the chapa and parilla grills – the wood fire adds smoky complexity to a blushing Ojo de Bie for two. Other menu highlights include a bubbling provoleta cheese to start, and chivito kid goat cooked in a traditional clay oven. Vegetables are kissed by the flames, too: order the burnt carrots and a salt-baked pear and burrata salad. Of the 500-strong wine list, the smoky El Enemigo Cabernet Franc marries well with red meats.
