Paola Carosella

From celebrity chef Paola Carosella, Arturito is a restaurant in São Paulo’s Pinheiros neighbourhood serving nourishing, ingredient-led dishes based on organic produce. With inspiration from the Mediterranean, the menu works through starters like Provençal-style mussels with toast and roasted aubergines, to mains such as wood-fired, oven-roasted chicken with tomato rice or fresh shrimp capellini pasta with roasted tomatoes.

Carosella grew up on a farm in Argentina within a family of Italian immigrants, where the women planted, harvested and cooked fresh produce daily. She worked in kitchens in Argentina, Uruguay, France and the US before moving to São Paulo in 2001 and opening Julia Cocina, an homage to Julia Child. She opened Arturito in 2008 and has won accolades for her simple, delicious cuisine exploring her roots.
