‘El Chato’ is a term of endearment used by Bogotá locals that chef Alvaro Clavijo dedicates to the restaurant’s affection for local ingredients. El Chato is located off a busy street in Bogotá’s Chapinero Alto neighbourhood and houses a relaxed space with wooden tables downstairs, and an open kitchen and a view of the spice library from the light-filled first-floor lounge.

The menu changes according to what’s in season, but usually features classics such as pork belly with parsnip purée, fresh bean salad and tamarind sauce, or catch of the day with fresh kefir, broccolini and peas. Among the desserts featuring local fruits, Mambe and Limonaria with honey and quinoa marshmallow is not to be missed, while the sunflower ice cream with fresh cucumber, praline and chamomile crumble is also a firm favourite. Imaginative Colombian cooking at its best.
