Mume (meaning ‘plum blossom’, Taiwan’s national flower) is a study in glass and polished marble. Hong Kong-born Richie Lin – formerly of Sydney’s nature-inspired Quay and Copenhagen’s world-famous Noma – pays homage to his adopted country with fresh, flavourful dishes that explore lesser-known Taiwanese ingredients such as goose barnacles prepared with modern European techniques. The pickled mackerel with tomato essence and wagyu beef tartare glistening with clam-laced mayo and confit egg yolk can also be viewed through this New-Nordic lens at this regular on Asia’s 50 Best list.
