Rodolfo Angenscheidt utilises his innovative interpretation of Paraguayan cuisine to create a hearty, creative menu at this Asunción restaurant. Taking inspiration from indigenous Guaraní recipes, with ample use of Paraguay’s natural larder, he plates generous dishes of 12-hour-cooked Paraguayan oxtail, surubí fish with moringa herbs, and payagua mascada - a lightly spiced prawn, onion and yuca fritter.

After working in the kitchens of Gordon Ramsay, Michel Roux and Martín Berasategui, Angenscheidt has spearheaded the formation of modern Paraguayan cuisine, and his forward-thinking establishment was the first restaurant in the country to enter Latin America’s 50 Best Restaurants list. Look out for his signature amuse bouche, a mouthful of the country’s national dish, the cheesy sopa paraguaya cornbread.
