Opened more than 50 years ago as a city tearoom, Tomo 1 grew into the renowned Buenos Aires institution under the watchful eye of leading culinary influence Ada Concaro. Today her son, Federico Fialayre, helms the kitchen. The refined experience, previously housed within the Hotel Pan Americano, will no doubt continue in a soon-to-announced new location.

Tomo 1 offers a tasting menu alongside à la carte offerings, but both follow the seasons. Fialarye has labelled his cooking ‘porteña gourmet’ – the cuisine of Buenos Aires inhabitants. Expect unctuous shrimp chupe soup, delicate trout cloaked in a lemon cream with toasted flaked almonds, and tender pork bladebone served beside Andean potatoes with a sweet mango chutney.
