New York’s trailblazing Angel’s Share opened in 1993 and paved the way for the cocktail revolution. It was the first venue to have rules of etiquette and to bring a sense of professional Japanese-style bartending to America, inspiring the likes of PDT and Milk & Honey years later. A quarter of a century creating the scene, this subdued speakeasy is still going strong. But Angel’s Share hasn’t rested on its laurels and to this day serves a menu of inventive cocktails, incorporating recent trends such as mezcal, amaro and clarification, alongside what are still some of the city’s best-balanced classics.
