The charismatic Singaporean pastry chef with an eye for unusual detail

Maira Yeo’s pastry career reads like a globetrotter’s guide to some of the world’s best kitchens. After spending four years at Meta in Singapore, ranked No.20 in Asia’s 50 Best Restaurants 2022, she relocated across the world to Aska in New York City, then Patrice Demers in Montreal and most recently to Cloudstreet back in Singapore.

Yeo’s move to Cloudstreet was an unexpected one. After her chapter in Montreal, she had intended to join the prestigious Maaemo in Oslo, but the pandemic put pay to the world-traveller’s plans, and she returned to her home city in 2020.

Undeterred, Yeo continued to bake throughout the pandemic. Her bake sale project, ‘Covid Bakes Lah’, was born from a desire to help her community. She began with a menu of four items, but quickly expanded to fulfil the high demand. News of Yeo’s ‘CCB’, an acronym for ‘crackly chocolate brownie’ cookies, travelled fast, as well as other favourites including her fig and pomegranate hand pies, rhubarb buckwheat financiers and olive oil and yoghurt lemon loaf.

Determined to do her part, Yeo donated 80% of her profits to two charities, HealthServe and the Umbrella Initiative, which support migrant workers and provide aid for the homeless in Singapore.

When, in July 2020, Yeo joined Cloudstreet – known for chef Rishi Naleendra’s heady combinations of Sri Lankan and Australian cuisines – it was a match made in heaven. Her vibrant confectionary, including her signature dessert of celtuce, yuzu, green chilli and yoghurt, were an instant success.

She recently led the opening of Cloudstreet’s dessert lounge on the second floor of the restaurant, where she continues to experiment with ethereal flavour combinations. Her most recent invention takes the form of a delicate quenelle: soursop sorbet, juniper berries, jambu (a waxy variety of apple native to Malaysia) and Kaffir lime.

Yeo’s dreamy creations across her star-studded career make her the worthy winner of the Asia’s Best Pastry Chef Award 2022, sponsored by Valrhona.
