As our goal is to promote the gastronomy of the region of Castile-La Mancha, Spain, we created a new brand to represent the honest dishes that define us.

Castile-La Mancha is a cuisine of Raíz, of Roots. It allows us to pay sincere tribute to tradition and origins. An authentic cuisine full of character. An extraordinarily rich, diverse and time-honoured gastronomy.

We staunchly champion our excellent raw materials, highlighting not only ingredients but also the age-old local techniques that have journeyed beyond our borders to become the seed of many other cuisines of the world. The culinary roots of Castile-La Mancha have spread to all five continents and it is at the heart of dishes and age-old techniques that today are mankind’s culinary heritage.
